Description Gluten-free buckwheat noodles soba

Soba buckwheat noodles are available with different proportions of buckwheat. soba is the Japanese term for buckwheat. The more buckwheat these noodles contain, the more intense their taste. On the other hand, soba with a higher percentage of buckwheat are more difficult to cook.

These gluten-free buckwheat noodles come from original Japanese production. They contain 100% buckwheat. Such pure buckwheat noodles are rarely available.

In Japan, buckwheat noodles are served hot in a soup or cold with a sauce in which to dip them.

Buckwheat noodles with 100% buckwheat do not contain gluten such as gluten, so they must not be overcooked. They are also more suitable for cold soba dishes than hot soups for the same reason. If the heat is too long, the noodles will disintegrate.

The noodle sauce (called tsuyu in Japanese) for cold soba buckwheat noodles is a combination of dashi, soy sauce and mirin. All the ingredients are available from us.

The sauce is served separately in a small bowl. A small, bite-sized amount of soba noodles is dipped into the sauce bowl with chopsticks and then brought to the mouth.
