Lao Gan Ma is the most popular chili sauce in China. For this sauce, fiery roasted chilies are marinated in oil with onions and fermented soybeans and seasoned.
Among the spices is the Chinese Sichuan pepper. Sichuan pepper has a very special aroma; it is lemony, woody, and slightly numbs the tongue.
The label on the jar shows the portrait of a woman. It is the founder Tao Huabi.
About the manufacturer
In the 1980s, the Chinese woman Tao Huabi ran a small noodle restaurant in the province of Guizhou. For her noodle dishes, she created a special chili sauce. The sauce was so popular that she decided to bottle it and sell it.
The company Lao Gan Ma was founded in 1997, and its chili sauce has become an essential item in many Chinese kitchens.
Today, the company sells over 1.3 million pieces worldwide every day.

Recipe: Vegan Chili-Crisp Sesame Noodles (Lao Gan Ma Noodles)
Ingredients (for 2 servings)

250 g wheat noodles, udon or instant ramen (without spice packet)

2–3 tbsp Lao Gan Ma Chili Crisp

1–2 tbsp soy sauce

1 tbsp sesame oil

1 tsp rice vinegar or lime juice

1 tsp maple syrup or sugar

2–3 cloves of garlic (finely grated)

1 teaspoon grated ginger (optional)

1–2 Spring Onions (finely chopped)

Sesame (white or black)

Optional Vegetables & Extras:

Cucumber (in fine strips)

Pak Choi, Spinach, or Chinese Cabbage

Edamame

Fried Tofu

Preparation
-
Cook the noodles
Cook the noodles in boiling water, drain, and reserve some cooking water. -
Stir the sauce
Mix in a bowl:-
Lao Gan Ma

Soy Sauce

Sesame Oil

Rice vinegar
-
Maple Syrup

Garlic & Ginger
Stir in 1–2 tablespoons of pasta water as needed to make the sauce creamier.

Mix noodles
Place hot noodles in the bowl and mix thoroughly with the sauce. -
Add toppings
Top with spring onions, sesame, and optionally vegetables, edamame, or fried tofu. -
Serving
Eat warm directly – or enjoy as a cold dish.
